Barley and Beef Stew

Portions: 6     Serving size: 1-1/4 cups

Ingredients

  • 1 cup uncooked pearl barley
  • 1 pound lean beef stew meat, cut into 1-1/2 inch cubes
  • 2 tablespoons flour
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons oil
  • 1/2 cup onion, diced
  • 1 large stalk celery, sliced
  • 1 clove garlic, minced
  • 2 carrots, sliced 1/4 inch thick
  • 2 bay leaves
  • 1 teaspoon Mrs. Dash® onion herb seasoning

Preparation

  1. Soak barley in 2 cups of water for 1 hour.
  2. Place flour, black pepper and stew meat in a plastic bag. Shake to dust stew meat with flour.
  3. Heat oil in a heavy 4-quart pot and brown the stew meat. Remove meat from pot.
  4. Sauté and stir onion, celery and garlic in meat drippings for 2 minutes. Add 2 quarts of water and bring to a boil. Return meat to the pot. Add bay leaves and salt. reduce heat to a simmer.
  5. Drain and rinse barley, then add to the pot. Cover and cook for 1 hour. Stir every 15 minutes.
  6. After 1 hour add sliced carrots and Mrs. Dash® herb seasoning. Simmer for another hour. Add additional water if needed to prevent sticking.

Helpful hints

  • For a CKD non-dialysis lower protein diet, decrease beef to 8 ounces per recipe.  Protein will be decreased to 14 grams per serving.

I did not use salt but I did increase the Mrs.Dash and put in more celery for added flavor. I got beef cubes at a local meat market and cut them even smaller than called for. This made a little more in prep time but the tenderness paid off.I doubled the recipe and put the rest in the freezer.

I thought barley was not dialysis friendly Moderator comment: Be sure you select pearled barley. 1/2 cup cooked contains 73 mg potassium and 43 mg phosphorus.

My family loves this recipe. I found it makes a difference to use fresh garlic and all of the pepper called for in the recipe. It is great with venison as well.

Made this recipe for st Patty's Day and it was a BIG hit with pts. It did thicken nicely; you need to soak the pearl barley prior to cooking for this to occur. Some did say the recipe needs more salt, but those were the pts that typically eat more sodium than recommended. Delicious!

Disappointing! The barley made it taste more like hot cereal than a main dish. Very bland, even with added salt-free seasonings.
