Almost Mashed Potatoes

Serving size: 1/2 cup
Ingredients
- 6 cups cauliflower (1 medium head)
- 4 ounces cream cheese
- 1 teaspoon garlic
- 1/2 teaspoon black pepper
Preparation
- Cut cauliflower into pieces and rinse with water.
- Place cauliflower pieces in a microwave safe dish, cover and cook on high for 8 to 10 minutes or until soft.
- Drain off moisture from cooked cauliflower.
- Carefully place hot cauliflower in a blender and blend until smooth.
- Add cream cheese, garlic, and pepper. Blend to combine ingredients.
- Remove from blender and serve hot.

Helpful hints
- Garlic powder may be substituted for the minced garlic.
- Since cauliflower is bland like potatoes, this recipe tastes similar to mashed potatoes. The potassium content is 100 mg lower per serving.
- To reduce fat content, use light cream cheese. Protein, sodium, potassium and phosphorus content will be slightly higher.

I am a HUGE potato lover and I love homemade mashed potatoes. I've found that leeching can be a pain at times, so I thought I'd try this recipe. I made them and had a few people over. Everyone really liked them. Even my husband who is not a big fan of most veggies, including Cauliflower liked these! My motto is: "Anything with cream cheese is worth trying." I will make these again! I added salt, sparingly, and lots of black pepper to mine. Fresh Garlic is the way to go!

After leaching, the fresh potatoes are around 40 mg lower in potassium than the instant potatoes, so yes, you could substitute and still be in an acceptable range. You could also use nondairy creamer instead of milk when making the instant potatoes. Some brands of instant potatoes contain extra sodium. Look for the lowest sodium brands.
