Cauliflower Latkes

Portions: 8     Serving size: 2 latkes

Ingredients

  • 2 eggs plus 2 egg whites
  • 1/2 cup onion, chopped
  • one 32-ounce package frozen cauliflower or 1 fresh head, steamed and drained
  • 2 tablespoons white all-purpose flour
  • 1/8 teaspoon pepper
  • nonstick cooking spray
  • cooking oil 

Preparation

    1. Steam frozen or fresh cauliflower. Squeeze out excess liquid.
    2. Place eggs and onion in food processor and pulse until combined. Add cauliflower, flour and pepper and process until finely chopped (do not over-process).
    3. Wipe a frying pan with a paper towel dipped in oil and also spray the pan with nonstick cooking spray.
    4. Heat on low until pan is hot. Drop batter by tablespoon into the pan.
    5. Brown latkes on both sides, turning once.

Helpful hints

  • Serve latkes with a spoonful of applesauce and a dollop of sour cream.
  • Potassium is reduced by over 100 mg per serving by substituting cauliflower for potatoes.

Let the cauliflower drain in a colander for a while before frying, and it won't be too watery. This recipe is a family favorite!
