Cauliflower with Garlic Sauce

Recipe modified from the Centers for Disease Control and Prevention Fruit and Vegetable Guide and submitted by DaVita renal dietitian Diana from New Mexico.

Portions: 8     Serving size: 1/2 cup

Ingredients

  • 4 cups small cauliflower florets
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon plus 1 teaspoon honey
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon fresh minced parsley or 1 teaspoon dried parsley

Preparation

    1. In a large saucepan with steamer rack, steam cauliflower over boiling water 8 to 10 minutes or until crisp-tender (cover with lid while steaming).
    2. In a small saucepan, cook garlic in olive oil for 30 seconds then remove pan from heat.
    3. Stir in honey, apple cider vinegar and parsley. Return saucepan to heat until sauce is heated.
    4. Transfer steamed cauliflower to a serving dish.
    5. Pour sauce over hot cauliflower and toss to coat.

I think I'd add the honey after cooking, so it's not heated too much. Honey should never be cooked at too high a temp, so it retains its health benefits. Otherwise, nice recipe!
